Recipe InSeitz - Chicken Pot Pie

We had snow fall again this week and so we are still in winter mode around here. I decided to make some winter comfort food and made this super easy chicken pot pie. I thought I'd share it here because it was so easy and pretty quick and a perfect dinner option for a snowy winter night.

Chicken Pot Pie

1/3 cup butter
1/3 cup chopped onion
1/3 cup flour
1/2 tsp. salt
1/4 tsp. pepper
1 3/4 cup chicken broth
1/2 cup milk
2 1/2 cups chopped chicken
2 cups frozen mixed vegetables
2 Pie crusts (can be bought or homemade)

Directions:
Prepare your pie plate by patting one of the pie crusts into your pie plate.
Pre-heat your oven to 425.
Melt butter in a large sauce pan, add onion and cook for about 2 minutes. Stir in flour, salt, and pepper and blend well. Stir in broth and milk and stir until bubbly and thickened. Stir in vegetables and chicken. Spoon into the prepared pie crust. Top with the second pie crust and seal and flute the edges. Cut 6 slits in the top crust. Bake about 40 minutes and during the last 15 minutes you may want to put foil over the edges so that the crust doesn't burn. Or if you have a pie shield you could use that instead.  Let sit for about 5 minutes before you serve it to let it set up/thicken a bit.
